Our flag cake

My cousin Maggie makes a flag cake a couple of times a year, so this holiday we decided to try too. I can't bake to save my life, so I practiced last week. Jack and I added all the ingredients and mixed it with our mixer and when I went to pour it into the pan it just seemed very thick. I took a look at the box and I forgot to add the water. Ugh. They even give you pictures on the back of the cake box of the ingredients. So Brian scraped it out of the pan and back in the mixing bowl for us because I was so frustrated. The cake turned out great but it was really thin. We only iced it last week, no fruit decorations.

Yesterday we made two cakes. I figured if one was bad or broke coming out of the pan we still had the other. If they both were ok, I could make a two layer cake. So we made the first cake and stuck it in the oven and it went well. I got all the ingredients in. Woo hoo. So we started making the second cake. I don't know how I missed the eggs, but I did. This time I noticed the missing ingredients before I poured the batter in the cake pan. Seriously how do I do this? I have never made a cake before last week, but there are pictures on the box and I just made the same cake not 10 minutes before. Ugh.

Anyway, they both turned out good so a two layer cake it was going to be. I bought two containers of frosting so I was set, or so I thought. Today we frosted the first cake and the top for the middle layer. Then I sort of broke the second cake getting it on, but that's ok, that is what frosting is for. We must have used too much frosting for the middle layer because I didn't have enough for the sides. Ugh. Brian thinks Jack and I ate too much of the frosting, but I don't think that is the case ;). It was just Walter, Kim and Mitch coming over and they are like family so I figured it was ok for us and for them. Next time I'll buy more frosting just in case.

Very Nice Niki! I love it! It looks great and I bet it tasted even better, ya know, with all that frosting! That's the best part!

Four times a year now, OK? Memorial Day, 4th of July, Labor Day, and Flag Day. You can even throw in a 5th and do Veteran's Day if you want! The more you make, the better you'll get. If you do one for all these days, in just one year you'll be an expert!
